A canned salsa made with onions, jalepenos, and carrots. Can use as a garnish on a variety of foods, and is excellent when mixed with melted white cheese to make a queso.
Ingredients
  • ⅓ part Onions
  • ⅓ part Jalapeños
  • ⅓ part Carrots
  • Brine:
  • 6 cups water
  • 2 1/2 cups vinegar
  • 1/3 cup canning salt
Instructions
  1. Chop vegetables into small pieces.
  2. Fill jars.
  3. Make brine.
  4. Pour boiling brine into jars.
  5. Hot water bath 10-20 min. or put jars in a 300 oven for 25min.
  6. Leave jars in oven till cool.
